Can I break an employment contract where I have been hired to cover a one-year maternity leave.?
I am 8 months into my 1 yr contract and now have the opportunity for a permanent position. Will there be any consequences from accepting another position? I would hate to leave my current employer in such a difficult position, but I need something permanent and i would hate to give up this opportunity.

if you’ve already got the new job then there’s not much you can loose?
even on short-term contracts you can usually leave with 2 weeks notice or so, check what your contract says.
if you know you definately have the new job, just ask the one you’re on a contract for what their deal is, what’s the worst they can do, fire you?
keep your oen interests the priority, don’t loose a long-term oppertunity for yourself for the sake of leaving them stuck for a few weeks.

I would take all the options and think real hard before making a decision. Make sure you ask all the questions you need to make a firm decision before taking the permanent position.
